These are cattle calling songs from northern Sweden. Young women were sent off to remote small loghouses to tend their farms cattle during the summertime. Daily chores included milking and refining but also to fend off the odd bear and other creatures coming from the woods. Real or imagined. These recordings were made in the late 1960's sung by women born in the late 1890's.

Clay bird.
A short note in the tips & tricks section of an old (1864) pocket sized hunters tuition book suggests that the pot and panless hunters way of cooking a Hazel hen in the field is simply by wrapping it in wet clay.
I removed head, feet and tail and stuffed it with butter, parsley and garlic. I sealed the bird in a half inch thick sheet of clay.
This moment opens up for all kinds of creative ceramic solutions I guess, mine being a simple sun. I buried the package in hot coals and waited 30 minutes before it’s slowly drying surface started cracking up. Skin and feathers came right off. The end result resembles steamed meat and wild game birds are basically fat free so cooking it this way really helped preserving all of it’s juices and flavours. I can honestly say that I have never gotten so much flavour out of a bird before so this method still makes perfect sense.

A true workhorse for trout and grayling. Imitates nothing, looks like everything. Pedigree colors and palmer hackle from the Black Zulu, an emerging profile similar to the Klinkhamer. Works completely dry, in the surface film and wet. I like them best tied on Partridge's Extreme Klinkhamer hook with its characteristic sharp bend. Tried and tested for two years, passed around to friends who really liked it. Aptly named "The Logcabineer"

When i first stepped into this basement shop a couple of years ago i knew instantly that i had found something special. Row after row of small containers with aquatic life all in perfect eco balance achieved by controlling factors like exact population, amount of food added, acidity (with alder cones/leaves), snails for cleaning and of course insane amounts of knowledge. No pumps or filters! One of the most fantastic creatures found here are the descendants of egglaying toothcarps collected from hazardous expeditions in war plagued Sudan. The first $20.000 expedition apparently failed. These beautiful humble fish lay their eggs in the bottom peat sediment and die only days later. The peat containing their eggs is then stored in darkness slowly drying out for almost twelve months and then woken up and hatched simply by adding water. This "diapause" is crucial so simulating an annual African drought is the only way breeding them.

"Coq de Bruyère aux Raisins" according to Raymond Oliver's book La cuisine (1965). Two rinsed Capercaillies, salt, pepper, thyme, wild thyme and savory. Cut small pockets in the breasts and fill with pancetta. Add half a bottle of red wine and one glass of brandy. Keep cool under lid for 2-3 days. Put a fist of good raisins into sweet white wine (Moscatel). Remove the herbs but save the winemarinade. Dry your birds in a cloth and brown them in butter. Lift out the birds and sear carrots, small onions and cloves of garlic. Put the birds back and add the marinade. Simmer for 45mins depending on the birds size. Add raisins and parsley, cook for another 20mins. Serve with freshly made bread croutons. Insane!

With all aspects taken in. The annual dinner held at Ivan's Restaurant just down the road the same night moose season opens is an absolute favourite. After hours of sitting out in the woods, an ice cold shower and a quick change of clothes i always find myself right on time at Ivan's enjoying cold beers and simple well made food with these formidable people that i only get to meet here on this very occasion. It could be Ivan's secret Russian recipe for perfect Borsjtj, or maybe my affection for this "the perfect dinner" stems from the simple genetic fact that my
granddadsgrandmasgranddadsgranddadsgrandmas granddad 'Tandsjö Eskil Finne' Nyröinen lived his whole life and died in 1665 in this very village. It's almost 350 years ago now, on this exact spot just below the glowing mountain that i can see through Ivan's tiny toilet window.

Misty violet mornings. It took three years for the female and male Sea-buckthorns i planted to finally bear fruit. It's acidic berries holds extremely high amounts of vitamins. Moose hunting has just started with early tranquil hours interrupted only by black coffee and sandwiches. Bird hunting gets squeezed into the late afternoons.
Key ingredients in a good wild bird sauce. Liver, heart and the muscular stomach.

Check out ABC Ballarats feature on Rohan Anderson and his brilliant project Whole Larder Love. A project that eventually will become a book next year. Judging by what we have seen so far that book will definately end up in both mine and alot of my friends kitchenshelves. It's also a real treat seeing his garden. I wouldn't be surprised if he was offered a tv-series as well, i know i would watch it. Good luck Rohan!

As soon as one enters the thick lichen grey wet parts of the older woods around my cabin you can almost be sure to encounter Hazel hens buzzing over your head like feathered bullets. Hazel hens are not really (for good reasons) what pointing dogs are looking for but if i get a good clean shot i sure will bring one or two back home. This one ended up deep fried with almond potato fries, sage vinegar and some freshly made lemon/blackpepper mayonnaise and a pretty amazing apple that i nicked from a neighbours tree down the road. That danish beer Høst Citra is by far the best brew on planet earth!

It took me almost three hours of navigating narrow gravel roads into the heart of Hälsingland to find out exactly where, how and by whom my three beautiful Gränsfors axes were made. My five lasting impressions of Gränsfors Bruk are 1. Brute force 2. Craftmanship 3. Tradition 4. Timing and 5. Consistency. There simply isn't any room for fine play or errors as one of their machinists told me.

This seasons first Black Grouse hung for two days. Chanterelles, pancetta, cognac, double cream, blooming oregano and mashed almond potatoes. The cranberries picked just beside my dock were a bit early so i kickstarted them with lots of sugar and a couple of hours in the freezer. A "six hour walk" sized meal follwed by the cult classic No Ice Brandy/Fruitsoda Mahogany Grog.

August 25th. Birdseason finally opens with an ultracrisp morning. Ruska hasn't kicked in around these parts quiet yet. Ruska is a finnish word describing the autumnal season with it's burning red, gold and violet colours. The not so old dog and the not too young dog is now a perfect combo. Late night bucket hotshowers becomes the rule. I believe americans call that starsign Big Dipper. We call it Big Bear.

Worlds best jacket! I have had this really cool wellmade fleecejacket with partial windproof trim made by a small climbing company called Verve in Boulder CO for almost 20 years now. I have used it extensively for fishing, skiing, snowboarding and mountainbiking and it seems to me it will most likely never give up on me. It has remained exactly the same since the day i bought it. The colors and shape are the same and not a single stitch has yet come loose. I googled Verve the other day and was surprised to find that they were still around, even with it's ultracool founder Christian Griffith. Listen to the man!

A fly fishing triathlon weekend with two prominent guests.
Henrik Bonnevier, king of deep fried panko grayling with chipotle and upcoming photobook Untouched Waters. On his left Kristoffer Marchi, archbishop of the no bean chili and rollcaster extra- ordinaire. The large finned Arctic Grayling has to be consumed promptly because it loses it's brilliant thyme-ish taste and texture in less than an hour after being dispatched. It cannot be transported or frozen which probably makes it one of the most exclusive, edible fish on earth. That Black Isle ale was mindblowing btw.

Walk 10 minutes away from my cabin and you will find beautiful remnants of a lost world at the open air Forest Museum. Just sixty years ago these woods were harvested by hand during long biting winters in waistdeep snow. Logged timber was either refined into charcoal in highly combustible charcoal stacks or transported out on horsesleds over watered icy roads. My 1940's 30-bed cabin with a separate room for an often female cook was the last type built before cars and buses were able to commute workers home over weekends. Seeing snowshoes for horses and tools like ten feet double saws and huge log tongs (which were actually invented in these parts) one can only begin to imagine what these men and horses were made of. Hard times.
